Gail Puccetti was presented the 2016 Outstanding Classified Employee award at the College of Business & Economics’ fall 2017 back-to-school barbecue. Senators and executive board members from the 2017-18 ACE Senate were there for the presentation. The award was presented by ACE President Rob Pangaro.

The ACE Chili Feed was a great success! Together we raised over $3,800 for the Boise State GoodWill Fund!

We had a great time and wish to thank everyone who helped out, whether donating chili and other items, helping set up and take down – or just showing up to enjoy good food and good company!  It was an outstanding event!

2014 Annual Chili Feed and Quilt Raffle

This year’s Chili Feed was awesome!  We raised over $1600 for the GoodWill Fund!  Along with those funds Capital Educators has donated $1500 and Boise State University Association of Office Professionals donated $328!

We had a great time and wish to thank everyone who helped out, whether donating chili and other items, helping set up and take down – or just showing up to enjoy good food and good company!  It was an outstanding event!

2013 Annual Chili Feed and Quilt Raffle

Carol Bugni’s Award Winning 1st Place Chili Recipe!

WHITE CHILI
Prep Time: 50 minutes

Ingredients:

1 small chopped onion (about 1 cup)
2 cloves minced garlic
1 Tablespoon olive oil
1 Jalapeno pepper, minced (be sure to wear gloves when handling Jalapenos)
4 ounce can drained chopped green chilies
1 teaspoon powdered cumin
½ teaspoon dried oregano
1/8 teaspoon cayenne pepper
½ teaspoon salt
1 ½ cups chicken broth
2/3 cup rinsed and drained white kidney beans
8 ounces cooked/chopped/shredded chicken breast (about 2 cups)
¼ cup chopped fresh cilantro
½ cup shredded Monterey Jack cheese

Sauté onion & garlic in olive oil in a soup pot until tender.  Add jalapeno, chilies, cumin, oregano, cayenne pepper and salt, and sauté another minute.  Stir in chicken broth, beans, and chicken.  Bring to a boil.  Cover and simmer for 25 minutes.  Stir in cilantro and cheese.  Serve.  Makes 3 (1 1/3 cup) servings.

*per serving: 300 calories; 14g fat; 5g saturated fat; 25g protein; 19g carbohydrates; 4g fiber; 13mg cholesterol; 1139mg sodium.

What I did for a crockpot of chili:

I used 2 chopped onions; 3 heaping tablespoons of minced garlic; one 4oz can of hot jalapeno peppers, one 4oz can of drained chopped green chiles, tripled the spices (except salt), added 3 cans of rinsed and drained white beans,  eyeballed the amount of chicken, added enough chicken broth to fill the pot, and then added ½ bunch chopped cilantro, and threw in a couple of handfuls of medium cheddar cheese. Cooked the chili for about ½ hour.  Cooled and refrigerated.  On the morning of the chili feed, I added Mexican cheese and the remaining chopped bunch of cilantro to the pot.

Much of the recipe depends upon personal taste.
